Recipe and words by Klara Risberg

Perfect for autumn days - a new take on the classic apple crumble.

Ingredients

Filling

4 large apples

1 tablespoon light brown sugar

2 teaspoons cinnamon

1 teaspoon freshly grounded cardamom seeds

Salted caramel crumble topping

150 g butter

75ml cream

75ml brown syrup

100ml caster sugar

400ml oat flakes

275ml all purpose flour

2 teaspoons vanilla sugar

1 teaspoon baking powder

1 pinch of flaky sea salt

Method

Start by heating up the oven to 180, grease a cake tin (24 cm) and set aside.

Peel and slice the apples thinly. Add the apples to the cake tin and sprinkle with brown sugar and cinnamon.

Melt the butter in a saucepan and add cream, syrup and sugar. Let simmer for 3 minutes and then remove from the heat. Stir in the remaining ingredients and stir together a batter.

Pour the batter over the apples in the cake tin and bake the crumble in the middle of the oven for approx. 30 minutes - until it has a golden surface.

Take out and let cool, serve with custard, cream or ice cream. Or all three!
